Ingredients
- 1 tablespoon oil
- ½ cup chopped onions
- ½ teaspoon chopped garlic
- 400 grams carrots, diced or cubed
- 2 tablespoons chopped celery
- ½ teaspoon cumin seeds
- ½ teaspoon salt or add as per taste
- 2.5 cups Vegetable Stock or water
- ¼ to ½ cup water – while blending, optional
- ¼ to ½ teaspoon freshly crushed black pepper
- 1 to 2 teaspoons chopped parsley or chopped cilantro (coriander leaves)
- ¼ teaspoon lemon juice – optional

Method
Step 1: Heat sunflower or olive oil over low to medium-low heat in a thick-bottomed pan or saucepan. Add the chopped garlic and onions. Until the onions are tender, sauté over a low to medium heat.
Step 2: Add salt, chopped celery, carrots, and cumin seeds. Make a good mixture. Water or vegetable stock should be poured. Once more mix and stir.
Step 3: Add a lid to the pot. Until the carrots are tender, simmer on a low or medium heat. Check the liquids a few times while cooking to see if they have dried or not. If the liquids have dried up, add an additional 1/4 to 1/2 cup of boiling vegetable stock or hot water.
Step 4: By using a fork or knife, check a few carrot pieces. It should be simple to remove the carrots with a fork or knife.
Step 5: Turn off the heat when the carrots are done cooking. The combination will include some liquid. As we will use these liquids when blending the carrots, let them remain in the mixture. Warm up or reduce the heat of the soup mixture.
