Spinach Soup Ingredients
- 450 grams Fresh Spinach Leaves
- 3 cups Vegetable Stock
- 8 tbsp Cream Cheese at room temperature
- 1/4 cup parmesan cheese, grated
- 1/2 tsp Salt (As per taste)
- 1 tablespoon Butter
- 1 small Onion
- 1 tablespoon Garlic, minced
- 1 Jalapeno, sliced
- 1/4 tsp black pepper, freshly grated
Method
Step 1: Boil water in a large pot. Keep ice-cold water on hand in a separate basin in the meantime.
Step 2: To the pot of boiling water, add the cleaned spinach leaves. Cook for a few seconds, perhaps 30.
Step 3: Immediately take the spinach from the boiling water and submerge it in the cold bath.
Step 4: Give the spinach a 5- to 6-minute soak in an ice bath. Once it has been drained, set it aside in a colander. Melt butter in a different soup pot.
Step 5: Add chopped onion and minced garlic. For 1-2 minutes, saute. Allow the onion to soften until the garlic has lost its raw fragrance.
Step 6: Add one diced jalapeno. If you don’t like the heat, remove the seeds. For 30 seconds, cook.
Step 7: Add the cream cheese, warm vegetable stock, blanched spinach, salt, and pepper. Allow it to cook for about a minute.
Step 8: Switch off the flame. Blend everything with an immersion blender until it’s smooth and creamy. Add Parmesan cheese and stir.
Step 9: Serve hot, topped with additional parmesan and freshly ground black pepper.
Tips to Enhance the Taste
- The leaves of spinach lose their vivid green colour if they are overcooked. Therefore, the finished spinach soup won’t have a vibrant green colour.
- Reheat the soup by bringing it to a single boil after pureeing. Keep it from simmering or it will lose colour once more.
- When sautéing the garlic in the ghee, avoid burning or browning it. Otherwise, it will taste unpleasant and bitter.
- Adding more or less garlic to the spinach soup can change how garlicky it tastes.
Serving Ideas
