  1. 2 cups Spinach
  2. 2 medium Potatoes, boiled
  3. 3/4 cup Green peas, fresh or frozen
  4. 1 Green chilli, roughly chopped 
  5. 1/2 tsp chopped or grated ginger
  6. 2 tbsp chopped coriander leaves
  7. 2½ tbsp roasted gram flour 
  8. 3 tbsp breadcrumbs
  9. Salt to taste
  10. 1 tsp + 2 tbsp oil
  11. A pinch of turmeric powder, optional
  12. A pinch of green cardamom powder, optional
  13. 1/4 teaspoon garam masala powder
  14. 3/4 teaspoon amchur powder

Method

Step 1:  Boil potatoes till tender in salted water. Fresh green peas should be boiled in hot water until soft if you’re using them. Thaw frozen peas if you’re using them.

Step-2: Blanch the spinach by boiling it in hot water for two to three minutes, draining it through a sieve, and then quickly transferring it to cold water. Using a colander, drain the cold water.

Step-3: Chop the steamed spinach roughly.

Step-4: In a pan, heat 1 teaspoon of oil over medium heat. Add salt, blanched spinach, and green peas.

Step 5: It will take 3 to 4 minutes, depending on how much moisture is in the green peas and spinach, to stir and simmer the combination until virtually all of the moisture has evaporated and it has become dry. Mix in the coriander leaves and a small amount of turmeric powder (optional ingredient; it is used to enhance the green colour). Wait a few minutes for the mixture to cool.

Step-6: Put the ginger and green chilli in a small chutney jar of a mixer grinder.

Step 7: Grind them until they have a medium coarse texture. Add the cooked spinach-green peas mixture and pulse until smooth (or medium coarse texture if you like it).

Step-8: In a medium mixing bowl, mash or grate the boiling potatoes. Crushed greens are added, along with cardamom powder, garam masala powder, dried mango powder, roasted gram flour, breadcrumbs, and salt to taste.

Step-9: Combine all of the ingredients and taste them. To create a tangy flavour, add extra salt or dry mango powder as needed. If the mixture is too wet or sticky, add more breadcrumbs and combine thoroughly.

Step 10: In a nonstick skillet or non-stick tawa, heat 1-2 teaspoons of oil over medium heat. 

Step 11: When the pan is medium hot, add 2-3 tikkis at a time (depending on the size of the pan) and shallow fry until the bottom surface turns light brown, about 2-3 minutes.

Step-12: Flip each green tikki and shallow fry till light brown on the other side, about 1-1.5 minutes.

Step-13: Place each kabab on a platter. As an afternoon snack, serve hara bhara kabab with tomato ketchup or beaten curd.
