Malai Kulfi Recipe

Malai Kulfi Ingredients

  • 1 liter whole milk
  • 1 cup heavy cream
  • 1/2 cup sugar (adjust to taste)
  • 1/4 cup condensed milk
  • 1/4 cup powdered milk
  • 1/4 cup chopped nuts (almonds, pistachios, cashews)
  • 1/4 teaspoon cardamom powder
  • 2 tablespoons rice flour or cornstarch (optional, for thickening)
  • A few strands of saffron (optional)
  • 1 teaspoon kewra water (optional).

Method

  1. Boil the Milk: Pour the whole milk into a heavy-bottomed pan. Now, boil it over medium heat while stirring frequently. It keeps the milk from sticking to the pan’s bottom.
  2. Reduce the Milk: Once the milk boils, lower the heat to low and simmer while stirring occasionally, until the milk is reduced to about half its original volume. This should take around 45-60 minutes.
  3. Add Cream and Sweeteners: Add the heavy cream, sugar, condensed milk, and powdered milk to the reduced milk. Mix well and continue to simmer for another 10-15 minutes, stirring constantly to avoid burning.
  4. Thicken the Mixture: If using, dissolve the rice flour or cornstarch in a little cold milk to make a smooth paste. Add this paste to the boiling milk mixture and stir continuously until the mixture thickens further, about 5-7 minutes.
  5. Add Flavour: Add the cardamom powder, chopped nuts, and saffron strands (if using) to the thickened milk mixture. Mix and cook for another 5 minutes.
  6. Cool the Mixture: Take the pan off the flame and cool the mixture to room temperature. Once cooled, add rose water or kewra water if using, and mix well.
  7. Freeze the Kulfi: Pour the mixture into kulfi moulds or small cups. Use aluminium foil to cover the moulds, and insert the wooden sticks in the corner of each mould.
  8. Set the Kulfi: Place the moulds in the freezer and let the kulfi freeze for at least 6-8 hours, or overnight, until completely set.
  9. Serve: To serve, remove the moulds from the freezer and let them sit at room temperature for a few minutes. Run a warm cloth around outside of the moulds to help release the kulfi. Carefully unmould the kulfi and serve immediately.
